The book is Paint your own Masterpiece edited by Mark Churchill, ISBN 0-89009-528-0.
It is a fascinating book on the theory and practice of oil painting, covering 30 paintings from Van Eyck, via Rubens, Turner, Renoir, Van Gough, Picasso and Mondrian to Hockney. To be fair, I think the Mondrian example is rather over-complicated, but I guess it has to be to justify the book and fit in with the others.
